From the kitchen to leadership – culinary excellence and business acumen
This three-year bachelor’s program combines intensive practical chef training with academic studies in business and management.
The program comprises six semesters, three of which consist of professional internships, and provides you with a strong foundation for an international career in gastronomy, hospitality or as an entrepreneur. After graduation, you will be well prepared to take on leadership roles in the industry – or to start and run your own business. The program is 3 years long, with 3 internship periods of 24 weeks each.
École Ducasse is located in Meudon, just outside Paris. The school offers assistance in finding accommodation and has a modern, newly built campus with state-of-the-art equipment.

Culinary arts
During the program, you will develop advanced skills in both the restaurant and hotel industries. You will learn to:
- Plan and run kitchen and food operations based on budget, concept, location, season and ingredients
- Work professionally with hygiene, safety, presentation and serving
- Create and develop culinary concepts tailored to the market and target group
- At the same time, you will gain knowledge of how to start, take over and run a business – from strategy and daily operations to personnel management and business development in a changing world.
Business & leadership
The program provides you with a solid understanding of business and leadership skills, which are crucial for success in today’s food and restaurant industry. Examples of course areas:
- Entrepreneurship and business models
- Economics and financial management
- Marketing and new trends
- HR, talent management and law
- Sustainability and operational strategy
- The program concludes with a final project in which you develop your own food service concept and business plan.
Internship – a central part of the program
Three compulsory internship periods of 24 weeks each are an integral part of the program. Before each internship, you will receive professional preparation in the form of workshops on CVs, applications and interviews, as well as industry knowledge and career planning.
Your academic results, commitment and professionalism will determine your access to the most attractive internships, such as Ducasse Paris, Guy Savoy, Dorchester Collection, Maison Pic, etc.
Entry requirements
- High school diploma (or equivalent)
- The program is primarily aimed at students aged 18–25
- English: native speaker or equivalent level (IELTS 5.5 or equivalent)
