Primarily aiming at recent high school graduates who want to develop into creative professionals and future leaders in the industry. The program lasts three years, with three internship periods of 24 weeks each.

Pastry skills & creative craftsmanship

During the program, you will develop broad and in-depth expertise in the pastry industry. You will learn to work professionally with:

  • Pâtisserie, viennoiserie, chocolate, confectionery and ice cream
  • Product development with a focus on shape, colour, texture and presentation
  • Raw material handling, production, hygiene and safety
  • At the same time, you will gain knowledge of how to start, run and manage a business – from strategy and daily operations to personnel management and adapting to market changes.

Business & entrepreneurship

To succeed in the modern confectionery industry, you need both technical skills and business acumen. The program therefore includes courses in areas such as:

  • Entrepreneurship and business models
  • Economics and financial management
  • Marketing and new trends
  • HR, law and sustainability
  • The program concludes with a final project in which you develop your own concept and business plan.

Internship – real industry experience

Three compulsory 24-week internships are a central part of the programme. Before each internship, you will receive professional preparation in CV writing, interviews and career planning. Internships are offered at some of the world’s most renowned establishments, such as: Pierre Hermé Paris, Angelina, Dorchester Collection, Maison Pic, Sadaharu Aoki, etc.
